This is a rich cake because of the variety of fruits in it. It will also have a subtle different taste because you will soak the fruits overnight in strong tea.
225g plain flour, 150g dark Muscovado sugar, 1 teaspoon baking powder, 150g butter slightly softened, 450g dried fruit – sultanas, currants, raisins and chopped dates, 4 eggs, 300ml cold strong black tea, 1 tablespoon dark treacle or cane molasses, 100ml brandy or sherry, 2 teaspoon of lemon juice, ½ teaspoon of freshly ground nutmeg, 110g ground almonds, 225g candied peel, 225g of glace cherries.
How To Prepare
Put all the dried fruits in a bowl with the strong tea and then cover and leave to steep the whole night. Preheat the oven to 325 F or Gas 3, Grease and line a 22cm round cake tin, Put the butter and sugar in a bowl and whisk until it is light, frothy and creamy. Put a beaten egg into the mixture and beat then add a ¼ of the flour then beat again.
Repeat this until you use all the flour and eggs. Add the treacle, brandy , nutmeg and the lemon juice in the mixture and stir gently until all the ingredients are well mixed. Fold in the baking powder Put the dried fruits after you have drained them and add the almonds, cherries and mixed peel then stir them until they are mixed thoroughly.
Stir this mixture gently into the cake batter until they are well mixed. Put the cake mixture in the prepared cake tin then bake until golden brown. This will take 2 to 21/2 hours.
Old Fashioned Fruit Cake recipes
3 cups of flour, 1 cup of vegetable oil, 1 cup of fruit juice, 1 1/2 cups of sugar, 1/4 cup molasses, 4 eggs, 1 teaspoon baking powder, 2 teaspoon of salt, 2 teaspoons of cinnamon, 1 teaspoon of nutmeg, 2 1/2 cup of raisins, 2 cup cut up dates, 2 cup of mixed candied fruit, 1 cup of chopped nuts.
How To Prepare
Preheat oven to 275 F or Gas 3 Mix the oil, sugar, eggs and molasses and beat together until the mixture is frothy. Put in 2 cups of flour, the baking powder and salt and continue beating together, Pour the fruit juice into the mixture and stir gently Put in all the fruits and nuts and mix with one cup of flour, mix this well then pour the cake batter over the fruit mixture and then mix thoroughly.
Pour the mixed batter into the ready cake tins then bake for 2 1/2 hours to 3 hours. When it is ready let it stand before removing the cake tins. Don’t remove the paper, wrap the cake in foil then store.You may brush it with brandy or wine twice before serving
Simple Fruit cake recipes
175g and 2 rounded tablespoons of self raising flour, 175g caster sugar, 2 tablespoon light Muscovado sugar, 200g softened butter, 2 teaspoons cinnamon, 2 teaspoons vanilla extract, 3 eggs, ¼ teaspoon cloves, 140g raspberries, fresh or frozen
How To Prepare
Heat the oven to 180c/gas 4. Butter and line an ovenproof dish or square tin. For the crumble mix, put in a mixing bowl the 2 tablespoons of flour, 25g of butter, Muscovodo sugar and cinnamon. Rub the ingredients all together until it is a breadcrumb texture. Mix the remaining flour and butter, caster sugar, vanilla, cloves and eggs well.
Put half the mixture in the oven proof dish or square tin and then spread the raspberries on top. Cover the raspberries with remaining mixture and sprinkle the crumble mix on top. Bake for 45 to 50 minutes until golden brown. Let it cool then serve.
